I know that a recipe like pork bell peppers is often found on cooking sites. I looked at it for a long time, but still couldn’t decide to cook it: either I was overcome by doubts, then the right piece of meat was not available, then the tomatoes were sold “plastic”, tasteless ... But this week everything worked out, and I still mastered this dish. The result of my labors in the kitchen did not disappoint me: it turned out really beautiful and tasty.

Actually, I went too far about the “works” - there is nothing complicated in the process of cooking accordion meat, you just need your desire to surprise guests or family with something new. This dish is a cross between the usual, baked in foil, and: as simple as the first, and just as appetizing as the second. I will now be happy to share with you how to cook meat "Accordion" in the pork oven.

Ingredients:

  • 1 kg pork (loin, boneless);
  • 2 medium-sized tomatoes;
  • 100 g of hard cheese;
  • 2-3 cloves of garlic;
  • 1-2 teaspoons of mustard seeds;
  • 1 teaspoon seasoning for meat;
  • salt to taste;
  • 1-2 teaspoons of vegetable oil.

How to cook accordion meat in the pork oven:

Rinse the meat in running water and pat dry with paper towels.

Lay the meat film side down. We cut a piece of meat into portioned pieces about 1 cm thick. We do not reach the base of the meat by about 1.5 cm. This way, we get a kind of “accordion” - the base of the meat is whole, and the pieces do not fall apart when baking.

We pass the garlic through the press, distribute it evenly over all the pieces of the "accordion". Sprinkle all parts of the meat evenly with seasoning and rub with mustard. If there is no salt in the meat seasoning, rub evenly with salt. If time permits, wrap the meat in cling film and send it to the refrigerator for a couple of hours to marinate. But in principle, this action is optional.


We cut the cheese into thin plates (it is best to use store-bought cuts - all pieces of cheese will be the same thickness). We cut the cheese plates into such pieces that, when placed in the cuts, they protrude over the edge by about 0.5 - 1 cm, then the meat will get a beautiful golden brown.

Cut the tomatoes into thin (3-5 mm thick) circles. Place a circle of tomato into each slot of meat for cheese.

Tie the meat with kitchen string so that the piece does not unfold during baking.

Then we tightly wrap the resulting "accordion" in 2 - 3 layers of food foil, after lubricating the sheet in contact with the meat with vegetable oil.

We put the foil with meat on a baking sheet or in a baking dish and place it in an oven preheated to 210 degrees C. Bake for 1 hour.

Then carefully unfold the top layers of the foil, freeing the meat (you can cut the foil with scissors) and put it back in the oven for another 10-15 minutes, until the top is browned.

  1. Wash a rectangular piece of pork.
  2. Make cuts in it with a sharp knife (as described above).

  4. Treat the meat with the marinade.
  5. Salt the pork.
  6. Add spices, rub with pepper.
  7. Marinate it for at least 2 hours (or even better - 6-10 hours on the shelf of the refrigerator).
  8. When marinated, stuff with slices of tomatoes, cheese and pre-fried chopped mushrooms.
  9. Remove the hard skin from the garlic cloves.
  10. Cut them very finely.
  11. Spread the garlic over the meat.
  12. Pork with stuffing bake in a foil envelope.
  13. Put it in an oven preheated to 180°.
  14. It usually takes 60 minutes to prepare.
  15. A few minutes before the end of the cooking process, open the foil and let the meat brown.

For a birthday younger son I prepared my signature dish: baked meat - an accordion or a book with vegetables. I often cook it from pork, but today I tried to make it from beef pulp.

Ingredients:

  • Meat -1.5 kg (pork neck, loin or beef pulp),
  • fresh bacon - 200 g (fat is required if you bake beef),
  • small squash or zucchini
  • 2 tomatoes
  • 1 sweet pepper
  • soy sauce - 3 tbsp. spoons,
  • vegetable oil - 5 tbsp. spoons
  • spicy mustard with grains - 2 tbsp. spoons,
  • lemon juice - 2 tbsp. spoons,
  • garlic - 4 cloves,
  • seasoning for meat
  • piece of ginger root
  • green leaf lettuce to decorate the dish.
  • Cooking process:

    I made my "accordion" from beef. Prepare the marinade for the meat. Pour vegetable oil, soy sauce, fresh lemon juice into a small bowl, add mustard, mix everything.

    We take a piece of beef, wash it well, make deep cuts across after 2-3 cm, but not completely cutting through. It looks like a book of meat.

    Sprinkle each cut with a dry mixture of peppers, seasoning for meat, finely chopped garlic and grated ginger. Pour the whole piece of meat and rub with the prepared marinade mixture.

    We put the "accordion" of beef in the refrigerator so that it is better saturated with marinade, ideally we leave it overnight.

    The next day, we start cooking the "accordion". Before you bake the meat, you need to put pieces of bacon in the cuts, which will add juiciness to the beef. After cooking, the fat can be removed or eaten, whoever likes it. Next, in each cut, lay out a circle of a young zucchini, fresh tomato and sweet pepper, you can add slices of cheese.

    We put all this meat accordion in a baking bag or sleeve, tie it up and send it to a preheated oven to 180 *, for about 40 minutes.

    Let the meat stand in the oven for a while, it becomes tastier when warm.

    Before serving, put the baked "accordion" of beef or pork on a beautiful dish covered with green lettuce.

    • 170 grams of cheese;

    If there is no honey, then add sugar. It improves the taste of pork and also helps to soften the meat fibers.

    This recipe for meat "Accordion" in foil in the oven is convenient because it allows you to get a side dish right away. Of course, there will not be very many potatoes, but it is enough for 4 servings. In this recipe, you can use pork or veal, in the second case, you need to marinate the meat for 2 hours longer.

    Ingredients:

    • 600 grams of potatoes;
    • 700 grams of meat;
    • 80 grams of mayonnaise;
    • 15 grams of garlic;
    • salt pepper;
    • 2 tomatoes;
    • 150 grams of cheese.

    Step by step recipe

    Cut the washed piece of meat with an accordion, carefully wipe all the pockets with a napkin to remove excess moisture.

    Grind garlic, shift to mayonnaise. Add salt to them, pepper, separate about half of the sauce, rub the meat thoroughly. Cover with cling film and leave to marinate for an hour.

    Peel the potatoes, cut into slices of 5-7 mm, that is, not thin, combine with the mayonnaise that remains. Mix thoroughly and put on foil.

    Put a marinated piece of meat on the potatoes.

    Cut the cheese and tomatoes into slices, fill the pockets.

    Cover the top with foil, twist the edges together so that the whole dish is inside.

    Cook "accordion" with potatoes for 1 hour and 10 minutes at 190 degrees.

    Optionally, along with the potatoes under the meat, you can put chopped onion. If you are embarrassed by the use of fatty mayonnaise, then you can cook this dish with sour cream or use cream, white Greek yogurt for the marinade.

    Option 4: Meat "Accordion" in foil in the oven (with prunes)

    For the preparation of such meat, a very interesting filling of prunes is used. Of course, you can just put dried fruits and slices of cheese into the pockets, it will also turn out delicious, but it’s better to do it a little differently. Additionally, you will need seasoning for meat or use any mixture of spices.

    Ingredients

    • 1 kg of pork or veal;
    • 130 grams of prunes;
    • 180 grams of cheese;
    • 70 grams of sour cream;
    • 1 tsp spices for meat;
    • 2 cloves of garlic;
    • 20 grams of dill;
    • 20 grams of mustard.

    How to cook

    Mix mustard with spices for meat, add one tablespoon of sour cream, salt.

    Cut the meat with an accordion, rub with the prepared marinade, let it stand for now. Immediately turn on the oven, let it warm up to 200 degrees.

    Soak prunes in warm water for 10 minutes. Squeeze, cut into pieces.

    Coarsely grate the cheese or also cut into pieces, like prunes, combine.

    Chop the dill, chop the garlic, transfer to the filling. Top with the remaining sour cream. Stir thoroughly, you can add any spices, but do not salt.

    Fill the meat slots with the prepared stuffing. Pack the "accordion" in foil.

    Put the dish in the oven for 1 hour and 15 minutes. If you want to brown it, then after 60 minutes of cooking, you can unfold the foil.

    Prunes should always be soaked. Otherwise, it will begin to draw moisture from the meat, it will turn out much drier than it should be.

    Option 5: Meat "Accordion" in foil in the oven (with mushrooms)

    Mushrooms will be used to prepare the meat accordion. They can be immediately laid in pockets, but it is better to fry a little in butter. This technique will enhance the mushroom flavor, which goes well with all types of meat.

    Ingredients

    • 1 kg of meat;
    • 100 grams of cheese;
    • 2-3, tomato;
    • 5 champignons;
    • 20 grams of butter (butter);
    • 30 grams of soy sauce;
    • 25 ml olive oil;
    • 30 grams of mustard.

    How to cook

    Mix oil with soy sauce, put mustard on them. Cut the meat across not completely every 1-1.5 cm. Grate with the mixture, set aside.

    Melt butter. Cut the mushrooms into neat slices of three millimeters. Put the mushrooms in a frying pan, fry for a couple of minutes on the strongest fire, add salt and cool.

    Wrap the accordion in a piece of foil. Put the meat with mushrooms in the oven. It will cook for 70 minutes at 200. If beef is used, then add another 15 minutes.

    There is another way to prepare this dish. You need to cut the tomato with cheese into cubes, mix with mushrooms, spices and just fill the slots in the meat. This option better fit if the piece is not very high, small pockets are obtained.

    In fact, such an “accordion” in the oven can be cooked not only with pineapples. Highly tasty dish obtained with oranges, quince, plums. But pineapple is also perfect with pork, a combination that many consider a classic. Canned rings and soy sauce are used here.

    Ingredients

    • 900 grams of pork;
    • 6 pineapple rings;
    • 6 slices of cheese;
    • 35 grams of sauce;

    You can cook this dish with turkey, chicken breast but I usually cook with pork. You can take the carbonade part, but I prefer to do it from the pork neck.

    Can be made with beef. I really didn’t, but I’m sure if you choose young fresh meat, preferably veal, it will turn out no less tasty than pork. Moreover, we will marinate the meat and cook it in foil, and for juiciness and taste we will also have tomatoes and cheese.
