Soda can be put directly into sour milk or kefir, they have enough acid and you can not extinguish it with vinegar on purpose. But if it is very scary that the pancakes will not rise, you can pay off, just in case.

The dough in the end should turn out like a very thick sour cream. It should not be too liquid (that means a lot of kefir was added and the dough will be more for pancakes, the pancakes will spread and not baked properly) or too thick (it means too much flour and the pancakes will not be soft, but "wooden").
To check, take a full spoonful of dough and let it drain, it should form folds and a tubercle in a bowl, but spread almost immediately, do not hold its shape.

For frying, I take a large frying pan (it will be faster) and put the dough on a tablespoon. I cook on medium heat.
